🍅✨ The secret lies in a traditional, simple, and highly effective method that maintains their
flavor, texture, and nutrients for much longer.
First, choose healthy, ripe, and firm tomatoes, free from bruises or soft spots.
Wash them thoroughly, dry them completely, and remove the stems. Then place them whole into
sterilized glass jars. In this method, no vinegar or salt is added—just the tomatoes as they are.
Fill the jars, leaving only a small space at the top.
Now comes the key step: water bath sterilization. Seal the jars tightly, place them in a large
pot with hot water that completely covers them, and boil for 40 to 60 minutes. This process
eliminates bacteria and hermetically seals the jars. Then let them cool completely upside down
to ensure a proper vacuum seal.
Once cooled, store them in a dark, cool, and dry place. And that’s it! You’ll have fresh
tomatoes for up to 24 months, ready for your soups, sauces, stews, or whatever you can
imagine—as if they were freshly picked.
