Curry Chicken Recipe

Ingredients:
– 2 pounds chicken (bone-in or boneless, cut into pieces)
– 2 tablespoons vegetable oil
– 1 large onion, finely chopped
– 3-4 cloves garlic, minced
– 1-inch piece ginger, grated
– 2-3 tablespoons curry powder (adjust to taste)
– 1 teaspoon turmeric
– 1 teaspoon cumin
– 1 teaspoon coriander
– 1 teaspoon paprika
– 1-2 teaspoons chili powder (optional, for heat)
– 1 can (14 oz) coconut milk
– 1 cup chicken broth (or water)
– 1 bell pepper (red or green), sliced
– 1-2 medium tomatoes, chopped (or 1 can diced tomatoes)
– Salt and pepper to taste
– Fresh cilantro for garnish (optional)
