Marinate the Beef: In a bowl, combine soy sauce, rice vinegar, oyster sauce, hoisin sauce, and sugar. Add the sliced beef, toss to coat, and marinate for 15–20 minutes.

Cook the Beef: Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Stir-fry the beef in batches until browned, then remove and set aside.
