Cranberry & Spinach Stuffed Chicken Breasts with Feta Cheese

Prep chicken: Preheat oven to 400°F (200°C). Slice each chicken breast horizontally to create a pocket, without cutting all the way through.

Make filling: In a bowl, mix spinach, cranberries, and feta.

Stuff chicken: Fill each chicken pocket with the mixture, then secure with toothpicks or tie with kitchen twine.

Season: Rub chicken with olive oil, garlic, oregano, salt, and pepper.

Cook: In an oven-safe skillet, sear chicken over medium-high heat for 2–3 minutes per side until golden. Transfer skillet to oven and bake 18–22 minutes, until chicken is cooked through (internal temp 165°F / 74°C).

Serve: Let rest for 5 minutes, remove toothpicks, and serve warm with a fresh salad or roasted veggies.
