1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch pie plate.
2. In a medium bowl, mix together the flour, sugar, baking powder, and salt.
3. In a separate bowl, beat the eggs. Add milk and vanilla extract.
4. Slowly whisk in the melted butter until fully combined.
5. Gradually blend in the dry ingredients until just mixed.
6. Gently fold in the shredded coconut.
7. Pour the batter into the prepared pie plate.
8. Bake for 45–50 minutes, until the pie is golden and a knife inserted in the center comes out clean.
9. Allow the pie to cool for at least 15 minutes before serving.
