Toast the fideo
Heat 1 tablespoon olive oil in a large skillet over medium heat. Add fideo pasta and toast, stirring often, until golden brown. Remove and set aside.
Cook the beef
In the same skillet, add remaining olive oil. Cook ground beef (or diced chuck steak) with onions and garlic until browned and fragrant.
Add potatoes & spices
Stir in diced potatoes, garlic powder, cumin, chili powder, salt, and pepper. Cook for 5 minutes to let the flavors develop.
Simmer with broth
Add diced tomatoes, broth, and toasted fideo. Stir to combine. Bring to a boil, then reduce heat and simmer 15–20 minutes, until pasta and potatoes are tender.
Serve
Adjust seasoning as needed. Garnish with cilantro and serve hot.
