In a skillet over medium-high heat, cook the ground beef until browned. Drain off any excess fat.
Add diced onions and green peppers. Sauté for about 4 minutes, until slightly softened.
Stir in taco seasoning and simmer for 1–2 minutes.
In a separate bowl, mix nacho cheese sauce and Rotel until smooth.
Lay tortillas on a flat surface. Spread a line of cheese-Rotel mixture down the center. Add beef mixture, a dollop of sour cream, and crushed Doritos.
Fold in sides and roll up tightly. Toast each wrap in a skillet until golden and crispy on both sides, 2–3 minutes per side.
Serve with shredded lettuce and optional toppings like salsa or guacamole.
Notes
Warm tortillas before filling to prevent cracking.
Use a dab of butter in the skillet for extra flavor and golden color.
