1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in the egg and vanilla extract until well combined.
4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
5. Gradually add dry ingredients to the wet mixture, mixing just until combined.
6. Scoop about 2–3 tablespoons of dough per cookie and roll into balls. Place them on the prepared baking sheet, leaving space between.
7. Use your thumb or the back of a spoon to make a deep well in the center of each cookie (don’t press all the way through).
8. Bake cookies for about 10–12 minutes, until edges are set but centers are still soft.
9. Remove from the oven, and while warm, gently press the well again if needed. Fill with about 1 teaspoon of jelly or jam.
10. Sprinkle with chopped peanuts if desired. Let cool slightly before serving.
