Ingredients
For the Bibingka:
3 cups glutinous rice flour
1 can coconut milk (about 13.5 oz)
3/4 can sweetened condensed milk (save the remaining for topping)
1 cup evaporated milk
3 tablespoons melted butter (plus extra for greasing)
3 large eggs
1/2 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract (optional for added flavor)
For the Toppings:
Remaining sweetened condensed milk
Grated cheese (preferably sharp cheddar or a local cheese like queso de bola)
Optional: Slices of salted egg on top for added flavor
Optional: Fresh grated coconut for garnish
