Sausage French Toast Roll-Ups

Prepare the sausage links in a skillet or oven as directed on the package. Set aside once cooked.

Remove crusts from each bread slice and flatten thoroughly with a rolling pin.

In a shallow bowl, whisk together eggs, milk, vanilla extract, and cinnamon until homogeneous.

Position a sausage link at one end of each bread slice, roll tightly, and secure with a toothpick if necessary.

Immerse each assembled roll-up in the egg custard, ensuring even coating on all sides.

Heat butter in a nonstick skillet over medium. Cook roll-ups, rotating, until golden on all sides, about 3–4 minutes. Remove toothpicks if used.

Arrange warm roll-ups on a serving plate. Drizzle with maple syrup and dust with powdered sugar if desired.

Notes
Plant-based or turkey sausages can be substituted for a lighter or vegetarian version.
Uncooked roll-ups may be prepared a day in advance, refrigerated, and reheated before serving.
