1. Prep & Sear
Preheat oven to 375°F (190°C).
In a skillet, heat 2 tbsp olive oil. Brown sausage pieces for 3–4 minutes until golden. Remove and set aside.
2. Build Flavor
In the same skillet, sauté onions, peppers, and garlic until softened (5 minutes).
Stir in potatoes and season with Cajun seasoning, paprika, thyme, and black pepper.
3. Smother & Bake
Transfer potatoes, veggies, and sausage into a large baking dish.
Pour chicken broth and Worcestershire sauce over the top. Drizzle with remaining olive oil.
Cover with foil and bake for 40 minutes.
Remove foil, stir, and bake another 15–20 minutes uncovered until potatoes are tender and edges are caramelized.
4. Serve
Garnish with fresh parsley.
Serve hot with cornbread, rice, or as a stand-alone dish.
