Spicy Jalapeño Popper Egg Rolls

In a bowl, combine cream cheese, cheddar, jalapeños, bacon (if using), garlic powder, onion powder, salt, and pepper until smooth.
Place 2–3 tablespoons of filling in the center of each egg roll wrapper. Fold in the sides and roll tightly, sealing the edges with a bit of water.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry egg rolls in batches for 3–4 minutes until golden brown and crispy. Drain on paper towels.
Serve warm with ranch dressing or sriracha mayo for dipping.
