1. Preheat oven to 375°F (190°C).
2. Peel onions and slice into ¼-inch thick rounds. Separate slightly but keep rings mostly intact.
3. Grease a baking dish and layer the onion slices evenly.
4. In a bowl, mix cheddar, mozzarella, and Parmesan.
5. Sprinkle cheese mixture generously over the onions.
6. Drizzle melted butter evenly on top.
7. Season with garlic powder, salt, pepper, and herbs.
8. Cover loosely with foil and bake for 20 minutes.
9. Remove foil and bake another 15 minutes until bubbly and golden brown.
10. Let rest 5 minutes before serving.
